It’s no secret Mexico is crawling with all kinds of amazing food from street tacos to the more traditional pozole, so I wanted to compile a list of the BEST Foods to try in Guadalajara, Mexico! This city is the host to some amazing cuisine, loved by locals and tourists alike. Eating is probably my favorite thing to do when I visit this wonderful city so I’ll also recommend a few places to try out on your next trip. Enjoy!

Carne En Su Jugo
If you’re a meat and spice lover, then Carne en su Jugo is the dish for you! This flavorful dish translates to “meat in its juices” and if that doesn’t already sound delicious just wait till you try it. Traditionally, the meat is roasted in its juices with beans and bacon, creating a truly savory dish. If you’re in Guadalajara and want to try out some delicious carne en su jugo, I recommend going to Karne Garibaldi. There’s about 4 locations in the city and they are notorious for bringing out the food in record time.
Tortas Ahogadas
No trip to Guadalajara is complete without trying Tortas Ahogadas. It’s essentially a pork sub drowned in a delicious tomato salsa. The pork is made carnitas style (yum) and is served on salted bread with toppings such as onions or radish. You can opt to have the tomato salsa spicy or mild. It’s the perfect dish to try out when visiting Guadalajara to get a taste of local cuisine. If you’re in town, try out Tortas Toño, they have over 3k+ reviews on google and provide some yummy tortas.
Al Pastor Tacos
If you have never tried al pastor tacos, stop what you’re doing and try them asap! Al Pastor tacos are made by slow roasting savory pork meat on a spit fire. You will also often see them seasoned with pineapple for an added sweet/tangy flavor. Overall, they’re delicious and some of the best al pastor tacos can be found in Guadalajara. For some authentic al pastor tacos in GDL, try out the La TOMATE Taqueria. This restaurant has some of the tastiest al pastor tacos in town, I highly recommend checking them out!
Pozole
If you’re looking for the ultimate comfort food, then you should try out some traditonal pozole when visiting Guadalajara. If you’re looking for a nice “home cooked” meal, I highly suggest you try Cenaduría Dona Guille. A cenaduria is place where you can find some traditional late night Mexican plates. I tried this place out on my last trip to Guadalajara and had some of the best pozole of my life! The broth was savory with a slight hint of spice. This place also served some of the best flautas and enchiladas ever. The menu is small, so you know the food they serve is high quality.
Birria de Chivo
Last but not least, one of my all time favorite dishes in Guadalajara is Birria. This flavorful dish originates from Jalisco, where it’s traditionally made with goat meat. However, plenty of places will make it with beef. Birria itself is so versatile and can be eaten a multitude of ways; as a soup, in a taco, as a wet burrito and can even be made into a queso-birria taco! It’s often topped with cilantro and onions and served with rice or tortillas. It’s a dish you don’t want to miss out on when visiting Guadalajara.
